Lay off The Caffeine

That’s what I keep telling myself, but it never seems to register.  I guess I’m not a good listener…

One cup of coffee is all it takes and I start to feel all jittery all over.  I must be one of the most caffeine sensitive people out there because this doesn’t seem to affect anyone else I know, but me.  Just two days ago I had a cup of coffee around 11:45am and couldn’t fall asleep until 3am.  The thing was, I went to bed at midnight.  3 hours I wasted, tossing and turning, because of that one cup.  I literally cannot drink coffee after 11:30am if I plan on falling asleep by midnight that night.  And if I drink coffee more than 3-5 days in a row I can almost always expect to have heart palpitations.

Since I can’t always have coffee in the morning, I have to make it up some other way.  Breakfast always works and I easily forget about that morning cup of joe.  Today’s breakfast…Crunchy french toast.

I bought wheat germ for the first time the other day and I wanted to somehow incorporate  it into my breakfast.  After two days of oats, i figured I should probably switch it up, so a new breakfast was born…

  • 2 slices bread, each cut diagonally to half (i like Ezekiel bread)
  • 2 egg whites
  • 1-2 T unsweetened almond milk
  • a couple of dashes Vietnamese cinnamon
  • 3 T natural raw wheat germ

Whisk together the egg whites, almond milk, and cinnamon and pour onto a plate.  Put the wheat germ onto another plate.  Take toast and soak in egg white mixture than generously douse it in the wheat germ.  Place toast in heated skillet and cook on medium heat for about 5 minutes on each side or until browned and toasty.

Top with any toppings you fancy.  They french toast itself is not sweet on its own, so if you like a sweet breakfast I recommend sweetening your egg white mixture.  I like to add my sweetness through my toppings.  I mixed 3 heaping tsp of low-fat cottage cheese with some diced peaches, mangos, and strawberries than microwaved for three – 20 second increments until the cottage cheese was warm and starting to melt into the fruit mixture.

This breakfast was a good way to get in some protein, vitamin e, folic acid, fiber, and other essential minerals.  Did you know in just two tablespoons wheat germ gives you 15% of your necessary vitamin e and 13% of your necessary folic acid needed daily.  Plus 4 grams of protein!  And it took my mind off the coffee 🙂

Does caffeine affect you in any way?  Most people I know don’t have any effects from caffeine…or claim that they get even more tired when they consume it!
