Today was full of
reviewing learning, finishing my last paper(!), and protein.
It pretty much started with a question…
What does one do when one is forgetful and forgot to put the ice bucket back into the freezer last night?
Go to the nearest coffee shop of course!
Starbucks just happens to be my nearest coffee shop so thats where I stopped by after the gym this morning. Actually, I didn’t exactly stop in since this particular Starbucks has a drive-thru. More like drove by. Laziness to the max? Yeah, I think so.
I couldn’t exactly just drive by and ask for a cup of ice now could I?…so I ordered myself a nice large cup of iced coffee. Something I haven’t had in a while.
Along with my iced coffee, I got my large cup of ice.
So why did I want this ice so badly? – I’ve been wanting to make a cold protein shake/smoothie for a couple days now and since I keep forgetting to put the container back in the freezer to actually make ice, I’ve had to resort to semi-cold chocolate milk. It’s good, but just not as good as it would be with ice. Especially in this heat.
Since I had a huge cup of coffee, and there was no way I could stomach both a protein smoothie and 20 ounces of coffee, I figured I may as well use it as my liquid.
So in went 1.5 cups of iced coffee, 1 serving of chocolate protein powder, a couple glugs of unsweetened almond milk, and about 2/3’s of my venti cup of ice.
I poured it into the previously ice filled Starbucks cup and it actually almost looks like a Starbucks frappe. I either put way too much liquid in or not enough protein powder, so it ended up tasting just like what I would think a Starbucks coffee frappe would taste like. yum 🙂
I think the coffee I added in that ‘protein frappe’ may have given me some super concentration powers or something because I plowed through my paper like no other. Three cheers for coffee!
Shortly after it was lunch time and I found out that not only do I not have ice in this house, I have no food. Well, there’s some food, but the majority of it is expired.
After some scrounging around I finally came up with soba noodles, silken tofu, and eggs. Um…protein in a bowl? I think by that time, my stomach was ready to eat just about anything in a bowl.
Layer 1 – Soba Noodles:
Soba noodles pack quite the protein punch. Surprising, yeah?
Layer 2 – tofu:
I don’t think silken tofu is meant to be sliced. I couldn’t even pick move it to the bowl without it breaking on me.
Layer 3 – 1.5 eggs:
Basically just 1 egg + 1 egg white sprinkled with cayenne pepper.
A nice sprinkle of toasted sesame seeds.
Plus some chopped basil. (I LOVE (!!!) the smell of basil)
All mixed up with a little more toasted sesame seeds and cayenne pepper.
(Not to be gross or anything but…Don’t stare at the photo too long or else the noodles start looking like worms – don’t say I didn’t warn ya! 😉 )
I don’t think I’ve had such a protein packed lunch in a long time. It was actually so filling I never finished it. I ate all the other layers, but left some of the soba.
Right before dinner I had another protein bowl. Just a mini one though.
cottage cheese + a generous sprinkle of cinnamon + operations management notes
I wonder if protein has anything to do with productivity because I was certainly able to concentrate a lot better today than the previous days. Protein = full = satisfied = more concentration on work & less concentration on hunger pangs?
Or it could have been the fact that I finally got into study mode.
I think my brains reached capacity for the day so it’s time to crash and start new tomorrow.
So the other night I was sitting with my mom and sister and I began talking to my sister about lady gaga and how my mom had been watching a lady gaga special on mtv the night before, when my mom pipes into our convo and says…”I think she might be kind of weird.” Needless to say my sister and I had a good laugh. Seriously?…Just kind of weird? She’s Lady Gaga! I’m pretty sure she’s so well recognized because of her desire to be different. Which I have no problem with…whatever floats your boat 🙂
I just felt like sharing.
Now onto the best meal of the day. I was feeling both oats and pancakes, but in the end pancakes won out since I had the extra time to make them. It was a bit on the brown side today…
But that didn’t keep it from being some of the best pancakes I’ve ever made! I ate every last bite, even though it was borderline too much. I’m just going to say I purposely made them this way because one of my favorite foods just happens to be this color.
- 1/2 cup Kodiak Cake Mix
- 1/3 cup water
- 2 huge T organic low-fat cottage cheese
- 1 T ground flax
- ~ 1-2 T peanut flour
- 1/2 t extra virgin coconut oil for greasing pan
- 1 banana, sliced into rounds
Chocolate PB Sauce
- 5 t chocolate pb2
- 4 t peanut flour
- water until right consistency
Combine first 5 ingredients (up to peanut flour) and stir until combined. Grease pan with coconut oil and cook pancakes at medium low heat.
I layered bananas and chocolate PB sauce between each pancake and topped off with more bananas, pb sauce, walnuts, and a sprinkle of reduced fat shredded coconut. Those blackish specks may not be all that attractive looking, but have no fear, its just chocolate!

I have to go get a shot in my arm today at the clinic. I’m not really looking forward to it…
What’s your greatest fear in life? I’m not necessarily deathly afraid of shots. I just don’t like them. What I do dislike and fear though is spiders. They creep me out.

This morning started out with a date in between my PiYo and Cardio Strength classes. No, not THAT kind of date…this kinda date…
Dates are my energy booster and they never fail me. Especially when they’re stuffed with some sort of nut butter.
After gym-time I went home for my real breakfast…
I felt today was a special day being my first WIAW so I finished up breakfast with some cafe con
leche unsweetened almond milk with 1 drop of liquid vanilla stevia.
I kept it more along the lines of a half-caf as you may remember what happens to me when I drink fully caffeinated coffee.
Much procrastination and some school stuff later, I made lunch. Today’s star…Tofu!
Just a quick sear of the firm tofu on both sides in a dry skillet and I was ready to plate up. On the right we have the more savory sandwich…ezeikel tortilla spread with cedars all natural sundried tomato & basil hommus topped with tofu and avocado. On the left we have the sweeter sandwich…ezeikel toast spread with almond butter, tofu, and crofter’s strawberry jelly (a la Jess – minus the bbq sauce). Both were delicious and I couldn’t decide which I liked more.
***I love this particular hummus because it’s tasty, oil free, and lower in calories.
I knoww…calories schmalories. But i figured if there’s a lower fat content than I can have more of it 😛 ***
To complement my
jekyll & hyde sweet & savory sandwiches, I had some sweet sweet bell peppers with some more hummus.
And a mini handful of green tea pumpkin seeds.
Some time before dinner some quantities, quite large as a matter of fact, of rainier cherries and watermelon were consumed.
Am I the only strange-ling who prefers the watermelon closest to the rind?…I love sweets and all, but for some reason when it comes to watermelon, I prefer the less sweet parts by the rind.
Finally, it’s dinner time!
Grilled corn, grilled pumpkin, steamed-in-parchment-paper-on-the-grill black cod, cauliflower, and some unpictured brown rice.
I apologize for the unattractive photo. I was kinda hungry and in a hurry to eat…
Dessert was some more close-to-the-rind watermelon, some homemade kale chips, and a block of of dark chocolate.
Lindt 90%…One of my absolute faves! My other fave is Godiva 85%.

I feel like my days, especially during the warmer months, are heavily laced with fruits. What do you feel like you usually eat the most of everyday? Or is your diet generally more balanced?
Will I be running in the afternoons…At least not until summer is OVER. I think it’s time to get my lazy hiney up earlier on Saturday mornings after my eventful afternoon yesterday.
My smart-self decided to go for a run at 3:45pm yesterday afternoon for my weekly Saturday 3 miler. I got to around 2.5 miles when things started going down hill. I could feel the heat radiating upwards from the concrete and it felt as though the sun was shining directly on me from above. It was just hot all around. At mile 2.55 I literally had to keep jogging back and forth along one block of a park because that was the only area where there was some slight shade from some trees and it was the only way I could keep going. Finally at 2.8 I just had to stop. It was WAYY too hot and I was not prepared for the heat at all. I had no idea it was that hot out and I guess I didn’t have enough water in me. I was sweating like crazy and so incredibly thirsty I ended up calling my mom to see if she was nearby and could bring me some water (momma to the rescue!). Luckily I have the sweetest mom and she was close by at Wal-Mart and brought me a bottle of ice cold water. I was planning on continuing on, even if it was just walking, after she brought me my water, but Idiceded against it in the end. I was so hot I kept feeling chills up and down my back, so i just went home.
Lesson of the day yesterday…check the weather before going out. I took this photo with my phone as I was driving yesterday evening.
99 degrees at 7:30pm. Thats Texas for ya! I don’t even want to think about how hot it was around 4pm.
Needless to say, this morning (and last night) involved plenty of hydration.
I decided to change things up a bit and go the more savory route this morning for breakfast.
Breakfast taco (egg white + pepper + swiss cheese) with a side of a pineapple ring stuffed with low fat cottage cheese. Good and simple.
I’m going to a BBQ tonight and want to bring something along, so I’ll be doing some sort of baking this afternoon. Favorite Sunday afternoon activity 🙂

Thats what I felt like I had put in when I was making my breakfast this morning. Today was one of those days where I was all over the place. I wasn’t craving anything in particular, yet I kind of wanted everything.
- 1/3 cup kodiak cake mix
- 1/3 cup water
- 3 heaping t organic low fat cottage cheese
- 1/3 cup cooked quinoa
Mix kodiak cake mix with water, than add in cottage cheese and quinoa. Fold in blueberries. Cook at medium heat for about 5 mins, or until browned on each side. Enjoy with some blueberries, banana slices and a waterfall of chocolate peanut butter goodness.
I’m down to my last pack of TJ’s peanut flour (major 😦 face) so in order to make it last as long as possible, I’ve resorted to using other peanut flours. I bought a jar of chocolate PB2 not knowing that there is added sugar in it so it was way sweeter than I had expected. I added a little bit of TJ’s peanut flour and some extra dark cocoa powder to it and mixed it with a little water and, easy as that, it was much better!
This is a breakfast I will be repeating for sure. I’m totally loving the addition of quinoa to all my breakfasts!
As expected, I barely got started on my summer classes yesterday. I managed to buy two of my books and download the syllabus, but I still need to go to the bookstore to purchase one more book. I ended up watching way too many episodes of Glee on Netflix (I just started and am loving it!), and than going out to watch the International Final Qualifier for The Open Championship at my local country club. I’ve been going for the last two years and yet I’m still amazed at the fact that we can walk right along side all the PGA professionals and talk with them, given that they feel like talking. I didn’t stay for too long since it was hot and humid out (i know…I’m a wimp) and only ended up watching Mike Weir, Daniel Chopra, Ricky Barnes. I saw quite a few other golfers as I was walking in, but the only one I recognized was Brandt Snedeker. I wish Sergio Garcia hadn’t withdrawn…He would’ve been so much fun to watch!
I need to organize my class schedule today and figure out when all my tests/quizzes are so I can plan out the rest of my summer. Is anyone else taking summer school? Or do you have any exciting plans this summer?
My summer is officially over. Or at least thats how it feels right now, since summer classes started today. At least they’re online and I don’t have to actually go into school everyday and sit in a classroom. But I guess that wouldn’t really matter today since it’s STILL dark, dreary, and raining outside. It’s literally so dark it feels like it’s 8pm. Thats how many days in a row already? 4 or 5?
Thunderstorms called for oats once again. Today I introduced quinoa to my typical oats.
The quinoa added a great texture to the oats and its also great source of protein!
Quinoa, meet Oats – Oatmeal
- ~ 1/4 cup oat bran
- ~ 1/4 cup rolled oats
- 1/2 cup water
- 1/2 cup unsweetened almond milk
- 2 organic egg whites
- 1/3 cup cooked quinoa
- 3 heaping t organic low fat cottage cheese
Cook oat bran and rolled oats in water and almond milk over medium high heat until 3/4 of the way absorbed. Stir in egg whites until incorporated. Lower heat to medium and add in cooked quinoa and cottage cheese until incorporated.
I didn’t add too much quinoa into my oats this time because I wasn’t sure of the outcome, but I loved it, so next time I’ll probably take out the rolled oats and add in more quinoa. This was a super filling breakfast and a good and healthy start to the day to get back on track considering what I had after dinner last night.
We picked up this cookies and cream ice cream cake for my sisters birthday from Whole Foods. It’s all melted because the people at Dicks Last resort didn’t put it in the freezer. You think they did it on purpose because they’re supposed to be ‘Dicks’? Whatever the reason, it was still soooo good I had two slices.
I guess now that I’m back on track, I should be off to get organized and figure out what books and such I need for my classes and maybe start doing some reading. Keyword: maybe. Which most likely means not today 😉

HOTT. and humid.
Thats what it was today. I went out for a run this afternoon and I was REALLY feelin it. Dinner and drinks last night definitely played a large role in my excruciating run this afternoon. My plan was to run 5 miles, but I only made it 2.3 miles before I stopped. I probably could’ve made it a little further (but not much) however I kept thinking about how hot it was and how tired I was getting and how dehydrated I was. I ended up talking myself into just running .5 miles and walking .25 until I reached 3 miles and then it was down to just running .25 miles and walking .25 miles until I reached 4 miles. Than I just walked for 2 miles. My mind was not thinking very positively today. I’ve realized that what I eat really affects my physical ability the next day and last night’s 3+ glasses of vino and sangria didn’t help at all.
The effects of overeating and alcohol = No bueno.
You know what IS bueno though?? This!
Yepp! The return of breakfast 🙂 I was a very happy girl this morning and enjoyed every last bite of this oats/oatbran, cottage cheese, peaches and blueberries combo.
These past couple days/nights have been busy busy and I haven’t exactly had that much time to make anything spectacular, but I have been enjoying this quick and yummy combo.
A pineapple ring filled with cottage cheese. It’s nothing life-changing, but it’s an easy to make snack and combination of two of my favorites.
Okay, it’s officially WAY past my bed time. I’m going to drink a HUGE glass of water to re-hydrate my very dehydrated body and then I’m off to bed. Night oaties! 🙂
