Just in case you were wondering…I’m still alive! It’s been a while since my last post hasn’t it?
I spent the majority of the past couple days studying for finals and I’m ecstatic to say I’m officially DONE. Now I get a 2 week break before the fall semester starts up.
I took my last final yesterday afternoon and have been on the go since. After my final I headed home for lunch and a quick sesh with Jillian. I had just enough time to get in a workout before going to the airport to drop someone off.
This is a perfect workout when you’re short on time. It’s quick and you can make it as hard or as easy as you want.Less than 30 mins later I was drenched in sweat. I’m not sure if my house was too warm or if her workout was just that tough. Probably a combination of the both.
So after Jillian kicked my butt, I headed to the airport. Speaking of airports…Is anyone else fascinated by how airplanes work? As I was leaving the airport to head home an airplane flew right over me on the highway and landed on the runway to my right. I don’t know what it is, but I have this weird interest in watching them take off and land.
Anyways moving on…
I quickly showered after I got home so I could head out to meet up with some good friends of mine whom I’ve known since middle school! I’m always guaranteed a fun time when I see them 🙂 We had dinner at one of my favorite restaurants and then headed to…karaoke!
Needless to say, last night was a fun night! A great end to a full week of studying.
This morning started out the same as every other morning this past week. A big bowl filled with one Barbara’s shredded wheat, natures path heritage flakes, and fresh raspberries, blueberries, and diced white nectarine.

But I wanted something quick and easy so cereal it was. Still delicious though!
I was a little more ambitious when it came to lunch. I actually went foraging for basil outside and broke out the food processor
to make this basil pesto.
I spread it on one half of my Ezekiel sprouted english muffin and topped the other half with an egg white flower sprinkled with pepper.
It may have been a bit messy, but that pesto made the sandwich. I love how creamy it was since it was made with navy beans in place of olive oil. Plus I’m a sucker for anything with basil in it.
And now you’re alllll caught up with me and my eats whether you wanted to be or not 😉
So what am I going to be doing with my two free weeks? Well this week I’m just going to take it easy and do whatever I please and then next week I’ll be heading to a place more tropical. I need to get away from this heat!
I’ve got something fun in store for tomorrow thanks to my friend Christi (hiii!), but until then I have a date with a vacuum and some cleaning staples because I’ve got some serious cleaning to do. I won’t rest easy until I get it all done!

Any karaoke fans out there? – I’m as tone deaf as can be, but it definitely doesn’t stop me from belting out some old school songs. Thats part of the fun I guess 😉
Do you like homemade pesto? – This was actually my first time making pesto at home and I loved it!

I’m finally caught up (for the most part) with my summer school assignments and can relax a bit for a day or two 🙂
I spent the majority of yesterday working on a project and an assignment, which I completed a little earlier today.
It wasn’t all work though. I took a couple breaks in between.
During my mid-morning break, I went to buy a snack at my favorite bread shop downstairs. I needed to get my blood circulating in my legs 😉
After perusing a bit I decided on a sweet potato bread.
Doesn’t it actually look like a sweet potato from the side? I didn’t realize it until after I had snapped a photo of it.
The outside is soft bread, and inside is actually a sweet potato.
It’s definitely not the most attractive looking bread, but it’s a tasty one.
After I very slowly ate my snack it was back to work.
Any guess what my lunch was?
How about now?
It’s a tuna sandwich! Well, I guess it doesn’t qualify as a true sandwich since it’s not between two slices of bread, but I don’t know what to call it. Tuna roll? eh..
Whatever it’s called, it was mighty tasty.
And I ate it all. After all, I am a member of the clean plates club 😉
I had some golden kiwi and watermelon on the side.
Anyone know if you can eat kiwi skin? I didn’t try it, but I feel like I should.
After lunch I finished up my assignment (finally!) and headed to they gym for 22 mins on the elliptical, 17 on the bike, 17 on the treadmill, and 10 mins of abs.
Then came my favorite part of my day today. A walk to the grocery store! 🙂
I have no food here and needed some veggies stat. Plus I really wanted to use the steamer in the kitchen here.
I’ve never used an actual steamer before and this thing is amazing! You can make anything in it from rice to de-crystalizing honey, or even make yogurt!
Since it was my first time using it, I kept it on the simpler side.
I decided on some chinese spinach, carrots, tofu, and half of a mini Japanese pumpkin.
During it’s 15 mins in the steamer, I showered off and had some salmon rolls as an appetizer.
Then, voilà! – Veggies were ready.
I think I may have overcooked the spinach slightly, but it was still good and not tough at all. Just a bit brown.
After I was about 2/3’s through, I realized I didn’t season any of the veggies before steaming them, but I don’t really think it needed anything. Fresh veggies are always best as is. The carrots gave the spinach a slightly sweet taste, and the pumpkin was delicious on its own.
I couldn’t read the label of the tofu to see whether it was firm or silken, since it was all in Chinese, so it was a surprise 🙂 I usually eat firm, but luckily I like all tofu because it ended up being silken. Delicious and smoooooth.
This has to be one of the easiest dinners I’ve ever made! Aside from my instant noodles last night…
But that doesn’t count 😉
Now I’m off to find something to satisfy my sweet tooth 😛
I’ll also be making something with these in a bit!

Happy Memorial Day! Did anyone get the day off or do anything special today?
My day was pretty much the same as usual. It’d probably be different if I had actual classes rather than online classes, since I would get the day off. But since my summer classes are all online I’ve been spending a great deal of my afternoon getting everything organized and working on getting a couple assignments out of the way. No complaints though. I love that I can listen to lectures and do school from the comfort of my home. It does take some motivation to get working on things though.
My morning started off as all monday’s do with a gym sesh. But first, an almond butter stuffed date (which held me over for 3 hrs!). Since today is a holiday there were no classes so I had to come up with my own workout. I started off with 20 mins on the treadmill doing some speed work and then moved on over to the stairmaster for 20 mins of intervals, then 10 mins on the elliptical and lastly, rounded it all out with 15 mins of upper body weights and ab work. The
lady using the stairmaster before me gym fairy left this on the machine and I was more than happy to flip through it as I tackled those stairs.
I usually don’t read magazines when I’m using these cardio machines, but I think I just might start doing that more often, especially on the stairmaster. Time goes by SO much quicker when you’ve got interesting things to read! I like watching Kathy Lee and Hoda and all that, but after a while it just gets old real quick. You know what else made time go by faster? The man a couple machines down from me who was constantly telling himself out loud that “he could do it!” and “come on, you got this!”. I just pretended he was talking to me 🙂
I went home, showered off, wasted some time, and before I knew it, lunch time! One of my friends is in town this long weekend and we’ve been wanting to go back to Seasons 52 for a while, so today was the day. Since I don’t exactly have a breakfast to show you today, I’ll share my afternoon eats with you.
Edamame with Japanese green tea salt. This stuff is awesome! Especially if you like green tea. I love edamame in general. I’d probably eat it if you sprinkled dirt on it. Well…maybe not, but I do love it!
Ahi tuna and avocado roll wrapped in…I believe it was soy or rice paper?
Maui Tuna Crunch Salad. They actually gave us this dish by accident, but they left it for us to munch on until we got the salad we actually ordered. It was delicious and I’m glad I got to try it.
Lemongrass Salmon Salad. The salad we actually ordered. Loved the salmon!
Banana Cream Pie (I think it was banana cream pie? It was banana something…) This was good, but the carrot-cake was the real star.
Old fashioned Carrot-Cake. It’s a good thing this only comes in a little shot glass or else it could do some serious damage!
In case you were wondering…I didn’t eat all these foods alone 🙂 My friend and I ended up sharing everything because, well…sharing is caring. And also because everything on the menu is too good to pass up, so by sharing we can get the best of both worlds and try as much as possible!
So far its been two for two at this restaurant. The menu changes with the seasons and everything always tastes fresh and delicious. Plus its all under 475 calories (each dish)!
My evening will be filled with OB goodness. Also known as…organizational behavior lectures and assignments.

Don’t you just love those meals that make planned leftovers that are even better the next day? My go to Lentil Chili, which I found on the Whole Foods recipe page, is exactly that. It reheats nicely and the flavors are even more developed the next night or even 2 nights later. Recipe easily doubled.
Lentil Chili (adapted from Whole Foods Recipes)
- 4 cups low-sodium vegetable broth
- 1/2 medium yellow onion, chopped
- 1/2 large bell pepper, chopped (i prefer green, but red, yellow, or orange work just as well)
- 3 garlic cloves finely chopped
- 2 teaspoons salt-free chili powder
- 1/2 (16-ounce) package green lentils (about 1 1/8 cups lentils)
- 1 (15-ounce) can no-salt-added diced tomatoes
- 1/8 cup chopped cilantro
- non-fat greek yogurt
I just love how simple this recipe is. It’s fat free, but with the amount of flavor and how quickly it fills you up, you would never know.
Now on to the love handles! I’m currently multi-tasking by blogging and working on my school work at the same time, but I just took a mini-break and did a 7 min love handle workout by the Tone It Up girls.
It only took 7 mins, but I have so much more energy now and just instantly felt better and more motivated. I’ve been loving all the workouts Tone It Up has been posting, especially to get us ready for bikini season! They’re simple and relatively quick, yet super effective to the point where you can feel the burnnn. Plus, they have great recipes!
Time to get back to my paper, then its off to bed. I’m already thinking about breakfast tomorrow…I’m feelin either protein pancakes or a smoothie. Depends on how many times I hit snooze in the morning 😉 Night!
