Breakfast-ing

I’m loving life here in the Maldives!

I awoke this morning around 7am and spent 40 mins in bed watching Star Trek (it was on HBO and I couldn’t help but watch. SUCH a good movie!) then it was a quick face wash and tooth brushing and I was off to breakfast.

Breakfast here is just glorious.

Notice how everyone is barefoot? No shoes necessary at this resort 🙂 (They even have these cute green paddings that cover the bicycle pedals and make it comfortable for bare feet to peddle.)

It’s served in the main ‘house’ – about a 5 min bike ride from my villa.

This was my first time seeing that bean-shaped fruit on the right. It originally looks like this with its shell on.

It tastes kind of like a dried date.

Carrot and apple juice shooter

Toast with honey, lemon basil jelly, pineapple jelly, and coconut jelly (the best out of the three!) and a side of muesli.

Fresh squeezed pineapple juice with ginger and mint.

I’m loving all this fresh fruit! I promise I didn’t eat ALL of this alone, but I did eat the majority of it. Breakfast is the most important meal of the day, yeah?
I need all the energy I can get in order to bike around the island 🙂
I get to bike past this organic garden everyday.

Above the garden is a restaurant, Leaf, where I actually just had dinner tonight.

I also get to bike along this path that smells so good and forest-y.

I love that this resort is eco-friendly and serves mainly natural and organic foods including free range meats, all locally sourced.

Today’s been a looong day and I can barely keep my eyelids from drooping. Time for bed! Night 🙂

Waffles and Ice cream

Just finished one of my midterms and I only have one more tomorrow, which means…

I’m about half way through summer classes!! *waving arms in the air in excitement*

The past couple days have been busy full of errands, projects, assignments, and test prep.  Yeah, I kinda realized I should’ve done a little more studying, after taking my midterm (too late!), but I guess I’ll just do that before the final. 🙂

I usually get in some procrastination baking before tests, but I didn’t even really have the opportunity to procrastinate this time.

I didn’t exactly realize I was signing my life away when I signed up for summer classes.  One of the classes I’m taking has been by far the most time consuming/difficult course I’ve taken in a very long time.

I did however realize that I haven’t had an actual breakfast that doesn’t take more than 5 seconds to put together, so today I decided to make something goooood.

And of course I chose to do this on the busiest day of my week.  But it wouldn’t be my style to do it any other way 😉

In the spirit of summer, I chose waffles and ice cream.

Blueberry Waffles And Ice Cream

  • 1/3 cup Kodiak Cake mix
  • 1/3 cup water
  • 1 t ground flax
  • a couple T lowfat cottage cheese
  • an abundance of blueberries

Stirred it up and poured in a waffle iron.

Blueberry ‘Ice cream’

  • 1 frozen banana
  • frozen blueberries
  • splash of unsweetened almond milk

Blend all together in blender then put in freezer over night.

This actually came together a lot quicker than I thought.  The waffle was a breeze to make and the ‘ice cream’ was already pre-made.

Add some extra bananas…

And I was good to go.

And now I’m off once again.  Dinner out and then back to the books!

‘Outrageous’ Waffles

Last night before going to bed I was watching Outrageous Foods on the Food Network and they were featuring a restaurant that paired all their foods with gelato.  Now, that’s my kind of restaurant! Too bad it’s nowhere near me…

I thought their steak, egg, and coffee dish was pretty unique.  They served the steak over an egg with a large scoop of coffee gelato next to it.  Apparently it was amazing.  What really caught my eye though was their sausage and pancakes. Did someone say pancakes??  They served up sausage gelato (ew?) with pancakes.  I’m sure to all those who enjoy sausage, that dish is probably delicious.  And according to all those who tried it on the show, it was ‘outrageous‘.

Since I don’t eat sausage, I just had to re-create it and make my own version.

Regardless of the frozen strawberries, these were ahmazing.  I loved the coolness and creaminess of the ‘gelato’ with the piping hot waffle.  Such a good and tasty contrast.

I’m currently debating going to the Byron Nelson (sergio’s in the lead!) or staying home and getting my first paper done/going for my usual Saturday run.  My assignment is due tomorrow night, but I won’t have time to do it tonight or tomorrow afternoon/evening.  I might just have to stay home…gahh.  Let’s hope I can get in work mode this afternoon and bang out that paper.


Pink Waffles

Soo many random errands to accomplish today and are totally making me all stressed out, but first on the list was waffles 🙂  Can’t skip the most important meal of the day!  Last time I made waffles, they were good, but just not filling enough.  So I decided I needed to do something to bulk it up and make it more satisfying.  It definitely bulked up! 

I guess I poured way too much batter into the iron.  This thing was steaming like crazy and quite the gooey mess.  But it made a delicious waffle.

The cottage cheese crisped up and added an extra nice crunch to the outside of the waffle, while the strawberries softened up on the inside creating a pretty pink color and adding a subtle sweetness.

Pink (on the inside) Waffles

  • 1/2 cup kodiak cakes mix
  • 1/2 cup water
  • 3 heaping T cottage cheese
  • 1 T ground flax
  • 1/4 – 1/3 cup diced strawberries
Mix kodiak cake mix with water until fairly combined than add the rest of the ingredients stirring gently to combine. Pour in waffle iron.

So much to accomplish today yet I don’t want to start.   Plus I have a couple friends coming to town this weekend and I want to make/bake them something yummy, but I haven’t decided what yet. Any suggestions??  Any would be so greatly appreciated!!  I need something thats delicious, yet easy to make with a fairly simple ingredients list.

Waffler

I’m feeling back to normal today in terms of my physical feel 🙂  However, I had a little too much brownie yesterday from my trial batch, in addition to a few too many snacks before and after dinner, and my stomach has been feeling pretty queasy all night and this morning.  It’s strange though because having eaten so much last night I would think I wouldn’t be very hungry this morning, but I guess all that food amped up my metabolism or something because
the moment I woke up I was feeling ravenous.  I tried to satisfy it through a cashew butter stuffed date so I could go to my flexible strength class before eating breakfast, but ALL I could think about during my class was what I was going to eat for breakfast.  So when I got home, I broke out my…

WAFFLE MAKER!!  My awesome friends got this for me a couple years ago because they know I am a HUGE fan of waffles.  I don’t use this thing enough…

I just added water and a spoon of chia seeds to my Kodiak Cakes Flapjack and Waffle Mix, poured it into my waffler, and my waffle was ready to go!  I topped it with the same stuffing I used in my Un-Paula Stuffed French Toast and some bananas and toasted coconut.  Quick tip for toasted coconut: I toast up a big batch every once in a while and just store it in the freezer for easy access.  Makes it so much easier to add to my breakfasts.

On the side I also had 2 pineapple rings.  Can’t get enough pineapple!  It’s definitely on of my favorite fruits.

On the agenda for today: I need to go sell back my books to the bookstore and hopefully get some cash for that.  And than I need to use that cash (plus much more, i’m guessing) to buy the books I need for my summer classes.  Why are books SO pricey??  I hate it when they don’t take my books back, which I paid full price for and are still pretty much brand new, because there is a new edition out.  Such a waste of paper!
