Berry-licious Sunday

Rain or shine, Sunday’s are always the perfect day for pancakes.  To continue my welcome to summer, I decided to make some berry-filled pancakes.  Peanut butter and berries pancakes to be exact.

You can’t really see it too well, but these pancakes are filled with juicy raspberries, strawberries, blueberries, and blackberries.

PB & Berry-licious Pancakes

  • 1/2 cup kodiak cake mix
  • 1/2 cup water
  • 2 heaping T organic low-fat cottage cheese
  • 1 T ground flax
  • ~ 1/3 cup mixed berries (halved raspberries and blueberries, sliced strawbs)
Mix away!  Pour into skillet at medium and cook about 5 mins on each side or until browned.

The berries sweeten up the pancakes and keep them moist and doughy, just the way I like it.  It’s still super dreary outside, but these pancakes really brighten up any morning.

Well, I’m off to bake up a batch of vegan samoas (perhaps with brown rice syrup instead of brown sugar this time) and then its off to Dicks Last Resort for my sisters birthday tonight.  Have a nice and relaxing Sunday!! 🙂

  1. I think we would get along really well. We both love pancakes and waffles, as well as samoas. When shall I come over? 😉 These look fabulous!
